@oliver when i want to use >_> on github (where the _ is formatting) i surround it in backticks to turn it into a code fragment instead, so it becomes `>_>` which doesn't add too much to the plain-text view but is good when rendered
@oliver I don't know about Skype, but on Discord it should be possible with backslashing: \~_\~.
