i also like quark, inventorytweaks, and journeymap
@staticsafe speaking of clientside, I also use SoundFilters and DynamicSurroundings
the first one makes sounds quieter behind walls and echoes in caves/canyons
the second one is pretty hefty, it adds a bunch of sounds and visual effects to everything, it's really cool (and lets you turn down specific sounds individually)
for mapping, I like Antique Atlas better than Journeymap, because it requires an in-game item and looks quite nice and is not cheaty =P

also on the client side get optifine and some shaders on for a LOT of goodness (maybe start with sildurs vibrant and try others after)
@bea @staticsafe actually, I'm not sure Optifine adds anything anymore??? forge supports shaders and I don't get FPS gains from having it anymore (???)

appleskin is good
foamfix reduces RAM usage
chisel is a must have if you like building with cool blocks
JEI is a must to check out recipes
I like moustweaks, but that's clientside
Toast Control to disable the advancement nags if you know them already or don't care
