Incidentally, if you want a good way to make gooseberry fool then it's:
300gm gooseberries
300ml double cream
3 tablespoons sugar
A little butter (25gm?)
Top and tail the gooseberries, put them in a pan with the sugar and butter, cover and cook until they've gone pale and started to burst. Squish any whole gooseberries with the back of a spoon.
Allow to cool completely - overnight in a fridge is best.
Whip the cream, then fold in the gooseberries.
Chill.
