Did some laundry earlier, read a while, birdwatching off and on, and about to pull some experimental baking out of the oven.
@Sparrow A gluten-free, dairy-free cornbread. Turned out really nice!
@Sparrow Not vegan this time (eggs), but yeah, it's always tricky to make equivalents when the "original" version is almost completely due to ingredients that have to be left out. Mostly I don't even try.

Impressive! It's tricky to make things gluten free and vegan and still taste good/have the right texture. I guess it helps that it's cornbread, so it's less prone to be gluten-y in the first place.
