Neighbour chef came down to make breks whilst I was waiting on my fritatta.
Sounds like he has a few late shifts thanks to sporting events. Served ≈400 in an hour last night! 
Evidently he likes to annoy other chefs by using English instead of the "proper" French terms. His favourite is "English cream" (crème anglaise).
I told him I would just end up speaking French!

@Qwyrdo Another neighbour, my one time coworker, was in the kitchen, too. She got a job at the coöp my family went to for years.
So, more chats! Been a strangely social morning for me, but in a good way? Neighbours are, for the most part, pretty nice & have a lot of common interests with me.
